How to make Gajar Halwa or Carrot Halwa (Carrot pudding recipe) at home?

A full proof recipe for Carrot cake and it is loved by everyone at home so much that they keep asking me to make it. The only tedious part is grating the carrots and obviously whole family pitches in to do it, thankfully.

So, here we go with the simple recipe of Carrot Halwa ...

Ingredients:

Carrots - 2kg, peeled, washed and grated 
Sugar - 1kg + according to your taste
Ghee - 1/4 kg
Khova - 400 gms (sugarless)
Cardamom powder - 1/2 tsp
Raisins/Cashew nuts - fried in 2 tbsp ghee with some cloves (5-6) added

Method:

Carrot Halwa Recipe
Heat a large kadai, add 2 tbsp ghee and add the carrots and start cooking it until all the water evaporates.
It requires constant stirring, so keep doing it without the carrots getting burnt.
Once the water evaporates, add sugar with cardamom powder and mix well; it starts watering and close and cook with regular stirring until all the sugar evaporates. At this stage, it becomes very difficult to stir the carrots...that's when it's done. Now you add the crumbled khova and mix well....and dont cover the kadai and keep stirring the carrots, until the khova crystalizes and there is no water...add the left over ghee and fry nicely for 5 - 10 minutes and add the fried dry fruits and give a mix.
The Halwa is ready to serve whether hot or cold. Goes well with a scoop of vanilla icecream.
