Thambittu recipe
Rice protein laddu, prepared for Mahashivratri especially in Karnataka
Ingredients:
Rice flour - 2 cups
Roasted bengal gram dal (putanna) - 1 cup
Ground nuts - 1 cup
Sesame seeds - 4 tbsp
Dry coconut grating - 4 tbsp
Elaichi powder 1/2 tsp
Ghee - 4 tbsp
Jaggery powder - 2 cups
Water - half cup
Method:
Dry roast the rice flour in low flame until nice aroma comes out. Keep aside in a wide large bowl.
Next roast the bengal gram in low flame for few minutes. Allow to cool completely and blend to a smooth powder and add to rice flour.
In the same pan, roast the ground nuts in low flame until the skin separates. Cool it completely, remove the skin and clean it. Blend it coarsely and keep few aside to get that nutty taste in between the bites. Add this to the rice flour mixture.
And then roast sesame seeds and dry coconut grating too one by one for few minutes and add it to the flour mixture.
Now add cardamom powder and ghee and mix nicely to a crumbled Moist mixture.
Now heat the jaggery and water in a thick bottom pan, melt and bring to boil for 3 minutes...it forms a single string consistency.
Immediately add this to the flour mixture and mix well nicely with a spatula.
And slowly with your hads knead and make laddus of desired size.
Allow to cool completely before serving and store if needed in air tight container, it stays good for atleast a week.
