How to make Beerakaya Pachadi or Chutney using Ridge Gourd?

Beerakaya pachadi is an Andhra recipe and made using the skin/peel of the vegetable. Beerakaya is nothing but the ridge gourd in English and called Turai in Hindi, Heerekayi in Kannada.

This chutney is a favorite in my home and goes very well with hot rice/ghee. It's a very easy, tasty and quick to make recipe.

Beerakaya Pachadi Recipe

Ingredients:


  • The skin/peel of the Ridge gourd/Beerakaya - one cup
  • Ground nuts - 2 tbsp
  • Green chillies - 5-6 or as per your taste
  • Jeera - 1 tsp
  • Curry leaves - a few
  • Onion - a small one (diced)
  • Tomato - 1 - medium, riped  (diced)
  • Oil - 1 tbsp
  • Salt - as required.





Method:

Heat a non-stick pan; add oil
Add jeera and let is splutter; add all the other ingredients except salt and tomato.
Fry until the vegetable turns light brown and crisp, then add the tomato and salt and fry until the tomato is well cooked.
Let the mixture cool down and then put it in a blender and make it into a thick coarse paste. The chutney is ready to serve. You can add little water if required when blending to get the consistency.
