How to make Pudina Pulao or Mint Rice

Mint is a great appetizer or palate cleanser, and it promotes digestion. It also soothes stomachs in cases of indigestion or inflammation. When you feel sick to your stomach, drinking a cup of mint tea can give you relief.

Cooked Mint Rice / Pudina Pulao
Mint Rice or Pudina Pulao Recipe

Pudina Pulao or Mint Rice recipe is quick and easy to make with mint flavour which is refreshing. It can be served with the raitha of your choice.


Ingredients:
Cooked Rice - 2 cups
Oil - 1 tbsp (chopped)
Ginger/Garlic - 2 tsp
Green chillies - 2/3 (slit)
Cardamom/Cloves/Cinnamon/Bay leaves - to
season (2 to 3 each)
Chilli powder - 1/2 tsp (can adjust according
to your taste)
Dhaniya powder - 1 tsp
Turmeric powder - 1/4 tsp
Boiled peas - 1/2 cup
Fried Cashewnuts - 2 tbsp
Salt to taste

Grind to paste:
Mint leaves - 2 cups
Scraped coconut - 1/4 cup


Method:

In a thick bottomed pan, heat the oil and add the whole dry spices and then onion/green chillies, fry until brown and then add the ginger/garlic paste - fry until the raw smell leaves. Then add the spice powders, salt and fry well. Finally, add the mint/coconut paste and fry nicely until the raw smell disappears. 
Then add the boiled peas, fried cashews and the cooked rice. Fry well on the high flame until rice mixes well with the paste.
Mint Pulao is ready to serve with the onion raitha and coconut chutney.

Option: You can add boiled and cubed potatoes.
