How to make Brinjal fry?
Brinjal fry recipe - Easy and quick to make starter, accompaniment with Brinjal
Delicious dish goes well with curd rice, dal rice, rasam rice or as a starter.
Ingredients:
Big Balloon Brinjal - 1 (the brinjal used for making bharta)
Gram flour - 2 tbsp
Chilli powder - 2 tsp (as per taste)
Turmeric powder - 1/2 tsp
Cumin powder - 1/2 tsp
Aam choor powder - 1 tsp
salt to taste.
Oil to shallow fry
Coriander for garnishing.
Curry leaves (optional) - add while frying the brinjal pieces
Method:
Firstly mix all the powders with flour and add salt; make a dry mixture by mixing well in a broad plate.
Slice the brinjal after washing into medium thin slices (of 1 cm thick).
Now rub and coat the brinjal slices well with the powder mixture on both sides; and arrange on a big wide plate and allow it to marinate for 7-8 minutes in refrigerator.
Heat a non-stick or any tawa and add oil for shallow frying....place the brinjal spices neatly (few at a time) and on a low flame fry them by turning two times on both sides. Repeat with other slices. Garnish with coriander leaves and serve hot with any rice of your choice. Brinjal fry is ready to serve and tastes well ...a replacement for fish at my home sometimes :)
