How to make Karnataka style Donne Biryani

Mutton donne biryani recipe... step by step



INGREDIENTS:

For marination:
1  kg mutton
Red chilli powder – 3 tsp
Turmeric – 1 tsp
Salt – taste
Ginger / garlic paste – 2 tbsp
Curd – ¼ cup

PASTE 1  - fry in oil and grind (add water)
Onion –  3 big
Cinnamon  - 1 tbsp
Cloves – 1 tsp
Pepper -  2 tsp
Cardamom – 4-5
Green chilies  - 15-20 ( according to taste)

Paste 2 – fry in oil and grind (add lil water)
Pudina 1/2 cup
Menthe 1/2 cup
Coriander leaves 1 cup

Other ingredients:
Oil – 1 cup
Jeera sambha rice - 1 kg

Cinnamon - 2 sticks
Cloves - 7/8
Cardamom - 4/5
Bay leaf -  2
Shahi jeera - 1 tsp
Kasuri methi - 2 tsp
Star anise - 2
Stone flower - few
Turmeric powder - 1/4 tsp
Onion – 2 big
Ginger/garlic – 2 tbsp
Lemon juice - 2 tbsp
Salt to taste
Ghee 3 tbsp

Method:
Firstly, in a large bowl add the cleaned and washed mutton, add curd, ginger/garlic paste, red chilli powder, turmeric powder, and salt required for 1 kg mutton.
Keep aside for marination for 30 mins minimum.

Next take a kadai, add 2 tbsp oil and fry the spices, onion and green chilli (as per paste 1 ingredients). Fry nicely until onion turns brown and allow it to cool and then grind to a fine paste and keep aside.

Next in the same pan, add the washed and dried greens and fry until it is cooked and cool and grind to a paste and keep aside.

Once the marination time is over, cook the mutton with the liquid of marination without adding water in a pressure cooker for 2/3 whistles... As it depends on the type and size of mutton pieces. Check. If it's too tender one whistle should be ok like you cook rice. Otherwise it might need 2/3 whistles. The mutton pieces should be just cooked and not over cooked as it's going to again cook with rice.

Same time, measure 1.5 times of water to the measurement of rice. Example, if you take 1 cup rice, 1.5 cups water is needed as there will be water in masala and cooked mutton .

Now wash the rice nicely and soak for 15 mins... This can be done same time when you start the biryani process on stove.

Heat a large thick bottom vessel, add the oil and all the spices and onion and fry nicely until brown and then add ginger garlic paste and fry well.
And add the cooked mutton, turmeric and mix well and then add the onion/spice paste 1 to it and mix well, cover and cook for 5 mins
And then add the green paste, mix well and allow it to cook for 2-3 mins.
Now add the mutton with water and allow it to boil nicely and then add the required amt of salt for biryani and lemon juice. Mix well and when it's boiling nicely add the soaked rice (ensure you drain all the water completely after soaking)...mix nicely and check for salt and spices at this step and add if required.
Close the lid and cook in medium flame until the water has just evaporated. Now put a tawa on the stove and place the vessel on it and cook in very low flame for 15-20 mins or until done. If you want keep a heavy object on top of the lid too.
Once the rice is cooked and no water left... Its done
Now add the ghee on top and give a nice mix from bottom and it's ready to serve with onion raita and cucumber slices.
