Recipe to make Almond cookies (eggless)
Ingredients
1 cup almond flour (almonds roasted and ground)
3/4 cup whole wheat flour
1 cup powdered sugar (reduce if you don't want to sweet as my cookies were too sweet)
1/3 cup butter at room temperature
1/4 tsp baking soda
1/4 tsp vanilla essence
Pinch of salt
Milk 3-4 tbsp as required
Almonds to decorate
Method:
In a bowl, take sugar and butter... Beat well for few mins.
In a large bowl, add the almond and wheat flour, soda, salt, vanilla essence... Mix well.
Add the butter mixture to the dry ingredients and mix nicely with hand adding milk as required to make a soft dough.
Keep it in refrigerator for 20 mins in a bowl covered with cling wrap or cloth.
Then take it out and make it into equal sized balls, flatten a little and place almond slightly pressed in middle of the cookie. Line them on to a tray lined with parchment paper.
Preheat the over at 180 degrees, and bake the cookies for 15-17 mins .. It depends on each oven so check after 13 mins.
Allow it to cool completely and serve or store in airtight container.
