Healthy cakes using Jaggery and wheat flour

Healthy and nutritious Banana bread or Banana walnut cake


Ingredients:

2 ripe Bananas (big ones)
1/2 cup grated jaggery or a little more if Bananas are not sweet
Refined Oil 1/4 cup
Buttermilk 1/2 cup
Wheat flour 1.5 cups
Baking powder 1 tsp
Baking soda 1 tsp
Cocoa powder 2 tbsp (optional)
Water if required
Cinnamon powder 1/4 tsp
Vanilla essence 1/2 tsp optional
Walnuts chopped or any dry fruits/nuts of your choice

Method:



In a blender add chopped bananas, oil, buttermilk, jaggery and blend until smooth
Then put it in a bowl and add the wheat flour, cocoa powder, cinnamon vanilla essence, baking powder and soda mix slowly with cut and fold method, add water only if required a little, ensure the batter is like thick idli batter. Now add the walnuts and give a mix and retain few for topping.
Now grease a bread tin nicely, pour the batter and tap twice and top it with nuts. Now bake for 35-40 mins in a preheated oven at 180 degrees.
Please check after 30 mins as Baking time differs from oven to oven..
Once baked, cool it completely and slice and serve.
