Healthy, delicious and simple to make Pumpkin Halwa
Sweet Pumpkin is one of the nutritious vegetables and generally not liked by kids when you prepare subzi; but this one was a hit in my family and loved by kids.
Pumpkin Halwa or Kaddu Halwa or Sihi Kumbalakayi Halwa
Ingredients:
Sweet Pumpkin - peeled, deseeded and cubed (small) - 2 cups
Milk - half cup
Ghee - 2 + 2 tbsp
Sugar - 1/2 cup
Cardamom powder - 1/4 tsp
Dru fruits chopped - almonds/cashews and raisins
Dessicated coconut - 3 tbsp
Method:
In a pressure cooker, heat the 2 tbsp ghee and roast the pumpkin bites for 2/3 mins.
Then add the milk and pressure cook on high for 2 whistles.
After switching off, release the pressure manually after 2/3 minutes.
and you will see the milk looks like curdled, it's ok; now you mash the pumpkin nicely with a potato masher
and then put the cooker on the stove again, and add the sugar and keep stirring until it forms a thick paste.
Now add the dessicated coconut, cardamom, dry fruits and give a nice stir for 2/3 minutes and then add the 2 tbsp ghee and again stir for 1/2 minutes.
The Halwa is ready now, serve hot or cold...it tastes super yummy.
