How to make Pineapple Kesaribath

 Kesaribath recipe / Sooji halwa recipe

Simple yummylicious pineapple kesaribath or sooki halwa.

Ingredients:
1 cup Sooji (medium/bombay rawa) - roasted in 2 tbsp ghee
2 cups water
1 1/4 cup sugar
Ghee 1/2 cup
Dry fruits and few cloves roasted in ghee
Elaichi powder 1/4 tsp
Pineapple essence 1/4 tsp
Kesari food color - a pinch
Pineapple chunks chopped finely (optional)

Method:

In a kadai or a thick bottom vessel... Add water and bring to a boil, if you have fresh pineapple chunks add to boil....now, Add in the rawa slowly, by stirring and let the rawa cook and water is Absorbed completely. Now add the essence, colour and elaichi powder. Mix well and add sugar... Cook until the sugar blends with the rawa and becomes a sticky dough. Now add the ghee little by little and keep stirring until ghee starts leaving the pan. And then add the dry fruits mix well, cover and cook for two mins. 

Your rawa kesari / kesaribath / sooji halwa is ready to serve. Eat it hot to enjoy the flavors.
