How to make Gongura chutney

Gongura pacchadi recipe

Spicy chutney made of Gongura leaves is a famous andhra recipe.

Goes well with hot rice  topped with lots of ghee.

Ingredients:
500 gms of cleaned and washed Gongura leaves
Green chiilies 20 nos
Onion- roughly chopped - 1 big
Oil 3 tbsp

For seasoning:
Oil - 2 tbsp
Mustard, jeera, urad dal, red chillies, garlic crushed -4/5, curry leaves

Salt as required

Method:
Firstly heat a kadai, add oil and then the Gongura leaves, fry for 2 mins and cover and cook until all water evaporates. Then switch off.
Take onion and chiilies in a blender and coarsely/roughly grind so that you can get chunks of onion. Keep aside in a bowl once ground.
And in the same jar, grind the cooled Gongura leaves and grind to a paste.
Take another kadai and heat oil, and add all the seasoning and allow to splutter. Then add the onion chilli paste and fry for a minute. Then add the gongura paste with Salt until oil separates.

Spices can be altered according to taste, as gongura being sour requires more chillies and salt.
