Wheat Jaggery cake |
Ingredients:
Wheat flour 1 cup
Jaggery 1/2 cup grated
Curd 3 tbsp
Refined oil 3 tbsp
Baking soda 1/2 tsp
Water as required
Dry fruits chopped (cashew, almonds, raisins)
Method:
Mix curd and Jaggery in a big bowl until Jaggery melts nicely. Then add the flour, soda and oil, give a mix. Then add water as required to make the cake batter.., of medium flowing consistency and mix in the dry fruits keeping some for topping.
Grease a tin with butter and flour and then pour the batter and tap twice to remove air bubbles. Top with dry fruits and bake in preheated oven at 180 degrees for 35-40 mins. Please check the cake in between as it depends on your oven. The toothpick should come out clean when inserted in middle.
Demould once the cake cools down and enjoy with your tea.
