How to make watermelon rind palya or subzi
Best out of waste
Generally we throw the water melon rind.Now we can make yummy subzi which goes well with roti or rice as accompaniment.
Actually it can be cooked in different ways just like any other subzi (lauki, alu, etc)
Firstly remove the green peel by scraping it nicely after you have eaten the fruit from the rind.
Ingredients:
3 cups water melon rind, chopped into small cubes
1 big onion chopped
3-4 dry red chillies
Few curry leaves
Little coriander chopped
1 tsp jeera
1tsp mustard
2tsp chilli powder
1/4 tsp turmeric powder
1tsp Kasoori methi
1/2tsp chat masala
2tbsp Oil
1/4 cup water
Salt to taste

2tbsp Oil

Method:
In a pan, heat and pour oil. Add the mustard, jeera, red chillies, curry leaves and saute. Then add onion and saute nicely, add turmeric, chilli powder and the watermelon rind with salt and mix well.. Fry nicely for 5 minutes and then add watee, cover and cook in slow flame until its completely cooked.
Once the water has evaporated and the vegetable is cooked, add chat masala and Kasoori methi, stir and cook for 2 minutes, garnish with coriander leaves and serve
