How to make Khara Boondi at home
An easy to make spicy savory/snack recipe for Indian festivities and special occasions.
This goes well as accompaniment for Bisi Bele Bath or just time pass with Tea.
Ingredients:
Besan/gram flour - 2 cups
Rice flour - 2 tbsp
Hing - 1/4th tsp
Baking soda - 1/4th tsp
Chilli powder - 2tsp + 1 tsp
Salt to taste
Water 2.5 cups
Groundnuts - 1/4th cup
Fried gram (roasted channa) - 1/4th cup
Curry leaves - handful
Garlic - 7-8 crushed

Method:
Keep oil for deep frying in a wide pan.
And take a big bowl, add besan, baking soda, salt, 2 tsp chilli powder ( use according to your preference), rice flour and mix well. Then add water little by little and beat nicely until flowing consistency like dosa batter.
Once the oil is hot, pour the batter in the jallari (the ladle with holes/perforated spoon/slotted spoon), from a little above of the Kadai.
Use a big spoon and scoop one by one into the jallari... But see that the boondi comes up immediately upon dropping and put the batter only as wide as the Kadai and note more.
Fry until crispy and remove drain on a kitchen towel.

Similarly, finish all batter but note that the oil has to be hot every time.
After this, fry the ground nuts, fried gram, garlic, curry leaves one by one nicely in same oil using a deep frying ladle (used for french fries). Add all this to the boondi, add a little salt, 1 tsp chilli powder and give a nice mix.
Cool it down completely and store it in an airtight box.
