How to make Sweet Boondi at home easily.
Sweet boondi is an Indian sweet made on special occasions or festivals.
It is made very quickly and here is an easy recipe, tried and tested
Ingredients:
1.5 cup Besan (gram flour)
1/4 cup rice flour
Baking soda 1/4 tsp
Salt a pinch
Yellow food colour (optional) 1/8 tsp
Water to mix
Oil to fry
Sugar syrup:
1.5 cups sugar (same quantity of besan)
3/4 cup water
4-5 cloves
1/4 tsp cardamom powdery
And for garnish:
Cashew nuts and raisins 2 tbsp, fried in ghee.
Method:
Firstly mix all the dry ingredients and mix well. Add water little by little and make a batter just like dosa batter, not very thin but medium consistency.
Heat oil and by dropping the batter onto a ladle with the holes by holding it above the oil and let the droplets fall into it. Fry the boondi until it just turns out little crispy not much though. And repeat the same by draining the boondi on a tissue paper. Once you have finished the boondi frying.
Heat a wide pan and make sugar syrup of just a single consistency. Switch off the stove and add fried boondi and mix well. Add the fried cashew and raisins too and give a good mix and keep it covered for 2-3 hours. But in between every hour keep mixing the boondi from down to up, to get all the boondi absorb the syrup.
The boondi is yummy to savour and can be stored for a week.
