How to make quick and easy Lemon Rice
Lemon Rice is a south Indian cuisine. A simple Rice dish, a main course that is loved by all.
Chithranna is the name in Kannada for the lemon rice.Ingredients:
Rice - 500 gms cooked (it tastes nice with cold rice)
Ensure the rice is grainy separated and not sticky.
Onion 1 big - thinly sliced
Green chillies - 2/3
Red chillies -2/3
Coriander leaves chopped 1tbsp
Mustard 1 tsp
Urad dal. And Channa dal 1 tsp each
Groundnuts a handful (bcos we love it more)
Turmeric powder 1/4 th tsp
Salt to taste
Oil 3 tbsp
Curry leaves few
Lemon juice 2 tbsp
Method:
Heat the oil in a deep pan.
Splutter the mustard and dals
Add groundnut, fry nicely until Brown
And then add curry leaves with chillies
And then onion and coriander leaves with salt and turmeric powder, fry nicely until onion turns pink.
Switch off the stove and add lemon juice and rice and mix well. Check salt for your taste.
Mix well and serve with pickle or any accompaniment
