Eating pumpkin is good for the heart. The fiber, potassium, and vitamin C content in pumpkin all support heart health. Studies suggest that consuming enough potassium may be almost as important as decreasing sodium intake for the treatment of hypertension, or high blood pressure.

So here we go with the simple and quick to make Sihi Kumbalakayi Palya as we say it in Kannada.

Sweet Pumpkin Subzi Recipe
Ingredients:
1. Sweet Pumpkin - cut into small bite sized pieces - 500 gm (pls retain the skin and remove seeds)
2. Onion - chopped - 2 big
3. Green chillies - 5/6 as per your requirement
4. Curry leaves and mustard for seasoning
5. Coriander powder - 1.5 tbsp
6. Oil - 2 tbsp
7. Salt to taste
Method:
- Heat a Kadai (shallow pan) and add oil along with mustard and curry leaves.
- Once the seasoning is done, add the onion and green chillies and fry until the onion gets brown
- Then add the Pumpkin pieces with salt and cover and cook on a low/medium flame until done
- See that the pieces are cooked but in tact. This will hardly take 5-7 minutes as the pumpkin cooks very quickly
- Then add the coriander powder and then fry for 2 minutes. And it''s ready to serve.
Serve with Chapati/Dosa or Akki Rotti (Rice flour roti)
