How to Make Punjabi Style Methi Aloo
Ingredients:
- Potatoes- cubed - 250 gms
- Methi (fenugreek) leaves cleaned and chopped - 200 gms
- Butter -2 tbsp
- Asfoetida(hing) - a pinch
- Green chillies chopped - 2/3
- Crushed garlic 4/5
- Turmeric - a pinch
- Salt to taste
Methi Aloo Recipe
Preparation:
- Heat a shallow pan and add butter and potatoes
- Fry on a medium flame until it becomes slightly brown on edges
- Add the green chillies, garlic, hing and fry for a minute and then add the chopped Methi leaves, salt, turmeric and fry well and let it cook nicely for 6-8 minutes in the open pan. Keep stirring in between until the leaves are well cooked along with potatoes. The methi green leaves enough water to cook by itself, if you feel its not done and the water was not sufficient add little water ...2 tbsp and let it cook. Let all the water evaporate completely and the leaves should look wilted. Fry for 2 mins once no water is left...so that the glaze of butter is seen.
