Here come's the easy to bake - carrot cake recipe and that too eggless and butterless...wow so now you can eat without being very health conscious.

I made this cake for the first time when I had invited my friends home for a tea-party and they all loved it.

So, here we g
o now with the recipe for Eggless Carrot Cake.

Ingredients:
Maida - 3/4 cup
Wheat flour - 1/4 cup
Grated carrot - 1/2 cup
Curd  - 200 ml (thick curd and at room temperature)
Olive oil - 60 ml (I used normal refined oil)
Milk - 2.5 tbsp
Sugar - 1/2 cup
Vanilla essence - 1/2 tsp
Cinnamon powder - 1/4 tsp (don't miss this as this gives a very nice flavor to your cake, but however if you do not have it, you can just forego this)
Baking powder - 1/2 tsp
Baking soda - 1/2 tsp
Salt - 1/4 tsp
Walnuts - 1/4 cup (chopped)
Raisins - 2 tbsp (optional)

Eggless Carrot Cake slices
Method:
Sieve Maida, wheat flour, baking powder, baking soda and salt - keep aside
Take curd in a mixing bowl- add sugar, oil and milk and beat well until the sugar dissolves. Then add the vanilla essence, oil and mix well.
Finally, add the grated carrot and the maida mixture - fold well to form the creamy cake batter. And then add the dry fruits and mix well.
Preheat your oven at 180 degrees for 10 mins and grease your cake tin with butter and maida.
Pour the batter in the cake tin and bake it for 20-25 minutes or until the fork/knife comes out clean from the center of the cake. The baking time depends on the oven - so pls check after 20 minutes and continue to bake if needed for few more minutes.
Allow the cake to cool completely and then cut into slices to serve.
