How to make Vegetable Upma

Ingredients:

  • Bansi Rava/Sooji – 1 cup (Roasted)
  • Onion – 1 big (finely chopped)
  • Green chilli – 2 small (finely chopped)
  • Curry leaves – few
  • Mustard – ½ tsp
  • Channa & Urad dal – 1 tbsp each
  • Coriander leaves – 1 tbsp (finely chopped)
  • Tomato – 1 small (finely chopped)
  • Vegetables (peas/potato/carrot) – 1 cup (cut and boiled)
  • Oil – 2 tsp
  • Ghee – 1 tbsp (or as per your taste)
  • Salt – as per taste.
  • Water – 2.5 cups
  • Cashew nuts – broken (optional) – can be added while frying the seasoning.
  • Ginger – ¼ tsp (grated) – optional if you like the taste

Method:


  1. Take the roasted rava and keep it aside. If you don’t get roasted rava – roast the rava in a dry pan until nice aroma comes and the rawness disappears. The colour will change – but ensure you don’t burn it.
  2. Take a deep pan, heat it and add oil + ghee.
  3. Then add the mustard seeds – allow it splutter; then add the channa/urad dall and fry until it changes colour.
  4. Now add the onion, green chilli, curry leaves and coriander and fry until the onion turns colour
  5. Then add tomato and salt and allow the tomato to cook well.
  6. Now add vegetables and fry for 2 mins and then add water allow it to boil
  7. Once the water starts boiling, add the rava slowly and mix quickly so that it doesn’t form lumps.
  8. Put the heat on low, and stir/mix for a little while and then keep it covered for 5/7 minutes or until done. The water has to get evaporated and the rava has to get cooked completely.
After 7 minutes check and switch off…serve with a spoon of ghee if required.


Your yummy vegetable upma is ready which is healthy. You can also serve this with your choice of chutney too.There is a lot of variations to Upma – you can try and experiment as you wish.
