Whoa, Chocolate and muffins...who doesn't love these words. Anytime of the day, how many ever times, I can eat these or say anyone can eat these. My little son, 3 year old...he just grabs one after another and can eat atleast 3 in a go. He can't wait until it's done or cools down. And my daughter, as soon as she enters home from school, she can smell the cake and can't wait to put her hands on them.

We have the recipe down here using simple ingredients and we are not using eggs or butter...voila, cake without egg and butter, sounds good, ain't it?

Come on, now grab your gloves and the cupcake moulds and start baking.

And I forgot to tell you, that after I made these cakes for the first time... and my son after eating these, has started calling me 'cup cake' ...he says he loves calling me that way...hmmm...hope u know the hidden agenda behind these loving words and pampering mamma.

Ok, let's get started.

Ingredients:

  • Maida - 200 gms or 1 and 1/2 cup
  • Sugar - 200 gms or 1 cup (reduce it if you do not want it more sweet)
  • Cocoa powder - 2 tbsp
  • Chocolate chips - 2 tbsp (optional)
  • Baking powder - 1 tsp
  • Baking soda/cooking soda - 1 tsp
  • Bru - instant coffee powder - 1 tsp
  • Salt - a pinch
  • Oil - 80 ml
  • Milk - 125 ml (1/2 cup)
  • vanilla essence - 1 tsp
How to make Eggless Chocolate Muffins
Method:

  • In a bowl, mix all the dry ingredients except sugar and sieve it twice. Keep aside.
  • In another bowl, take the wet ingredients and add sugar to it, and whisk/beat well until the sugar dissolves completely.
  • Now add the dry ingredients mixture slowly, and mix well to avoid any lumps. Mix well until it forms a smooth batter
  • Preheat the oven for 10 mins at 180 Deg C. Meanwhile grease the muffin moulds and arrange the muffin liners. Use a spoon and put in the mixture carefully in the muffin cups to fill only 3/4th of it. And then place them in the oven and bake it for 15 to 20 mins or until a toothpick inserted at the center comes out clean.
These muffins are so addictive, you can alter the consistency of the batter by reducing milk if you want little dry muffins, add more if you want softer ones. The sweetness, too you can alter according to your taste buds. But the choco chips sure makes a difference in the cakes.

Serve it when it's warm, as it tastes heavenly with your evening tea especially.
