Sorekayi (bottle gourd) Sambar

Bottle Gourd (Sorekayi) helps fight constipation, as it is fiber rich. Because of its fiber and low fat content, it is recommended for diabetics and young children too.

Ayurveda recommends bottlegourd juice to treat acidity, indigestion and ulcers.

Bottle gourd also helps to lose weight since it is 96% water and provides very minimal calories. It is rich in Vitamin C, Zinc, Iron and Magnesium thus helps in improving overall health.

Bottle gourd Sambar is very tasty, easy and quick to make. 

Ingredients: 

Bottle gourd - 1/3 kg (peeled and cut into cubes)*
Toor dal - 1/2 cup
Onion - 1 big (chopped)
Tomatoes - 3 medium (chopped)
Turmeric - 1 pinch
Coriander leaves - 2 tbsp (chopped)
Sambar powder - 2 tbsp or according to taste (you can either use the home made sambar powder or the ones readily available in the market)
Salt - to taste
Water - 4/5 cups

For seasoning:
Asfoetida (Hing) - 1 pinch
Mustard - 1 tsp
Curry leaves - few
Dry red chillies - 2/3
Oil/Ghee - 2 tsp

Method:

Pressure cook all the ingredients above for 2-3 whistles. After the pressure is gone from the cooker, add seasoning to it and bring to a boil for 5-7 minutes in a medium/low flame.

Serve with hot rice and ghee.

*You can remove the seeds if the gourd is not tender.
