Vanilla Sponge Cake

Ingredients:

Maida - 200 gms
Butter - 200 gms
Sugar (powdered) - 200 gms
Eggs - 2 nos.
Baking powder - 1 tsp
Salt - one pinch
Vanilla essence - 1 tsp

Method:

Sieve well maida and baking powder and keep it aside. In a blender whip the eggs until fluffy and keep aside.
Beat the sugar powder and butter until smooth (butter should be at room temp). Mix this with the egg mixture. Add vanilla essence and salt and mix well again.
To this mixture slowly add maida little by little and mix well. Make sure there are no lumps in the mixture. The mixture has to be a thick paste of flowing consistency. If it is not you can add little milk.
Preheat the oven for 10 mins at 180 deg C. 
Meanwhile pour the mixture into a greased cake mould and then bake it in the preheated oven for 15-20 mins.
Check by inserting a tooth pick at the center of the cake, if it comes out clean then the cake is done. Let the cake cool down completely before you cut into slices.

Tip: You can add dry fruits or choco chips or tuti-fruits to the cake mixture before pouring it into the mould. The kids will love it.
