Methi Chapathi or Methi Roti

Fenugreek (Methi) is beneficial for people with diabetes. Galactomannan, a natural soluble fiber present in fenugreek slows down the rate of sugar absorption into blood. Fenugreek also contains amino acid responsible for inducing the production of insulin. Fenugreek helps flush out harmful toxins. It relieves indigestion and helps treat constipation.
Ingredients:

Wheat flour – 1 cup
Water – ½ cup or as required
Salt – ¼ tsp
Oil – 2 tsp
Fresh methi leaves (chopped finely) – 1 cup

Oil to fry the chapathis
Wheat flour for dusting – a little

Method:
Mix all the ingredients except the oil for frying chapathis. Make it into a smooth soft dough and cover it and leave it aside for half an hour.
Then take a ball of dough (bigger than a lemon) and roll it into thin circles (rolling should be even). Dust flour if required but do not add more flour while rolling.
Heat tawa, keep in medium flame - place the roti and wait till small bubbles appear, then flip to other side and spread a tsp of oil and again flip it over and apply another spoon of oil. Wait for few mins till golden spots appear. Repeat the same procedure for making remaining rotis.

Serve hot with your choice of curry, pickle, curd and a scoop of butter.
