A tasty tea time biscuit recipe for Diabetics or calorie conscious adults.
Ingredients:
Almonds (coarsely powdered) – ¼ cup
Wheat flour – ¼ cup
Oats (powdered) – 1 cup
Honey – ¼ cup
Baking powder – a pinch
Curd – 2 tbsp
Vanilla/Almond Essence – ¼ tsp
Method:
Mix all the ingredients and make soft dough, wrap it in a polythene
cover and refrigerate for 45 mins to 1 hour.
Take small balls of dough, flatten it on your palms and lightly press
with fork to make marks. Arrange the cookies on a non-stick baking tray (or use
butter paper on a normal baking tray) giving 2 inch gap for each cookie.
Preheat the oven to 180 degrees for 10 mins and bake the cookies for
12-15 mins or until they get brown at the bottom and sides. The cookies will
becomes hard and crispier once they completely cool down.
Tip:
You can add chopped almonds on top of the cookies before baking just to make it look attractive as these are not very tasty cookies since we have not added sugar. Serve them with hot tea or
coffee.
