Ragi mudde is one of the favorite dish of hardcore Kannadigas. Best eaten with non-veg curries, greens curry (soppu saaru), Bassaaru and Uppusaaru (these are typical village style dishes).
Ragi mudde or Ragi ball must be eaten hot, only then it tastes good. A very healthy dish for diabetics and diet conscious. It provides loads of calcium and fiber.
Ingredients:
Ragi flour - 1 cup
Water - 2 cups
Salt - a pinch
Ghee - 1 tsp
Method:
Boil water with salt and ghee in a thick bottomed vessel (preferably round one). Once the water starts boiling, sprinkle little Ragi flour and reduce the flame. Start adding the Ragi flour slowly and mix with a wooden spatula. Ensure that there are no lumps formed when mixing, cook on a medium flame for 5-8 mins. To know that the mixture has cooked, you can wet your fingers and touch the mixture; the mixture should not stick to your fingers. Once the mixture is cooked, take it out from the stove and mix well until smooth with the wooden spatula. Then take some mixture to a plate which is wet and with your wet hands make a smooth ball.
Serve hot with any curry.
