Ragi Ganji / Ragi Malt or Sweet Ragi Malt

Ragi malt helps in giving lot of strength and cools the body. It is very good breakfast in summer.

Ingredients:
Ragi Flour - 1 tbsp
Water - 1 glass (250 ml)
Salt - a pinch
Butter milk - 250 ml
Onion - 1 tbsp finely chopped (optional)
Green chillies - 1 no. finely chopped (optional)

Method:
Boil the water with salt in a thick bottomed vessel and add the ragi flour little by little so that it doesn't form lumps. Mix well and cook for 5 mins in a low flame.

Allow the mixture to cool down completely. You can even make this mixture in the night and leave it out, so that it will be easier for you to consume it in the morning. This malt is usually prepared with the left over ragi balls from the previous night.

Once the mixture cools down, add the butter milk, onion and chillies. Mix and smash well the ragi mixture in the butter milk well with your hands and make it into a semi-liquid, if required add some more salt according to your taste. It can be had without onions and chillies, but my husband likes it with them as it enhances the taste. This is a very healthy and filling breakfast.

Note:
Another option is to make it into sweet malt for the kids. Instead of adding the buttermilk to the cooked mixture, you can add boiled and cooled milk with powdered sugar/jaggery and cardamom powder. My daughter loves this.
