Curd rice is the yummiest food that all age groups enjoy :) Below is the easy and tasty recipe.
Ingredients:
Cooked rice - 2 cups (softly cooked or left over rice can be used too)
Thick curd - 500 ml
Carrot - 2 tbsp (grated)
Coriander leaves - 1 tbsp chopped
Pomegranate - 2 tbsp
Salt to taste
To season:
Oil - 1 tbsp
Mustard seeds - 1 tsp
Asfoetida - a pinch
Channa dal (bengal gram) - 1 tsp
Urad dal (black gram) - 1 tsp
Curry leaves - few
Dry red chillies - 2 (broken)
Method:
Mix well all the ingredients above except the items to temper. Then heat oil in a kadai, add the items to temper one by one and once cool mix it with the curd rice mixture.
Note:
If the curd is sour, add 1/4 cup of boiled and cooled milk. Instead of dry red chillies you can also use green chillies.
Tips: You can also add the dry fruits like cashew nut and raisins to make it richer when you have guests to serve.
You can serve with pickles and the deep fried curd chilli (majige menasinakayi)
