This is one of the favorite Andhra dish which is spicy and goes well with hot rice and ghee.
Ingredients:
Brinjal - 3/4 medium sized (cubed)
Onion - 1 big (cubed)
Tomato - 2 (cubed)
Green chillies - 7/8 or as required
Turmeric - a pinch
Water - 3 tbsp
Oil - 1 tbsp
Salt to taste
For seasoning
Oil -1 tsp
Mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Dry red chillies - 2/3
Curry leaves - few
Garlic - 4/5 (crushed)
Method:
Cut the brinjal into small cubes and add them to the salt water and leave it there, so that it doesn't turn bitter until you start cooking. In a kadai, heat oil and add all the ingredients along with water; cook well until the vegetables are done and the water is evaporated completely. Bring it down and mash well with a wooden spatula. To this mixture add the seasoning.
Serve with hot rice topped with ghee.
Variation: Bendakaya pachadi/Lady's finger chutney - You can try the same with Lady's finger (Bhindi/Okra); But dont add water while cooking, fry and cook all the vegetables in oil only. And the quantity of Bhindi should be like 10-12 which is chopped into 1" pieces.
